Last night I made potato soup and broccoli cheddar soup from scratch and they were mmm, mmm good and easy, too. I hate the fact that winter is setting in, but I do love soup. Serve with some homemade bread (or store bought); soup it's what's for dinner.

Weird. I made potato soup from scratch for dinner last night! It's totally scrumptious, and it's an easy recipe!!
6 Potatoes peeled and diced
2 carrots peeled and sliced
2 medium onions diced
5 cups of water
4 bouillon cubes
1 tbsp parsley
1 tbsp salt
Mix all of the above in a large pot and cook on medium heat, 40 minutes. Stir occasionally. Then, add 1/3 c butter and a 12 oz. can of evaporated milk. Cook another 30 minutes, stirring often.
Then, eat it, because it's yummy and delicious and so easy to make!!
Y'all need to get on the White Chili Express because it's heading coast to coast. I've made it for so many people that the STAKE PRESIDENT came up to me at Trunk or Treat and said, "So, Anna, I heard that you're responsible for that creamy white soup my mom made for me last week." So, it's getting passed around and I'm THIS CLOSE to finally being famous. Watch for me as the guest chef on the Today show.
But since I'm humble, I'll share the recipe:
White Chili
2 chicken breasts- boiled & cubed
2 cans gr. chilies or fresh diced/seeded jalapeno
1 med. onion, diced small and sauted
3 cloves garlic minced and sauted
1 can chicken broth
3 cans Northern Beans
2 TBSP butter (for sauteeing but I obviously use way, WAY more)
1 tsp salt
1 tsp cumin
1 tsp oregano
1/4 tsp cayenne pepper if needed
1/2 tsp black pepper
HEAT ALL then,
Fold in 1 c. sour cream
1/2 c whipping cream
ENJOY!
p.s to make it super awesome I throw everything in the crockpot and let it simmer all day and then add the dairy stuff 30 minutes before serving. Add shredded cheese and some homemade rolls and you're in a very happy place...
