So I have a new recipe for you to try out. I just love it. My triathlon training hubby is on a "our-family-eats-like-crap-and-needs-to-change-its-ways-or-else..." "Or else what?" I ask, taking personal offense, since I am the one and only chef/dietitian/ nutritionist/short-order cook that prepares meals for the family. Anyway, my answer to my own question is, "Or else we'll be living in a van down by the river eating Ho-Hos."

This recipe came from www.savingdinner.com I'm not a follower of The Fly Lady, but for those of you who haven't heard of her, the website is www.flylady.com. It's a site devoted to moms who are in need of a little more organization in running their stress filled busy lives, or at least, that's my take on it. Anyway, there are lots of great helps and info and it's all free.

Saving Dinner is a service you can sign up for to receive weekly menus and grocery shopping lists. I'm far too frugal (cheap) to pay someone else to do something that I am completely capable of doing. There are free menus samples you and look at, and I'm always looking for new things to try.

The basic recipe is this, brown some pork chops and stick 'em in a 9x13. Cook a few yams or sweet potatoes. (Sidenote: I NEVER liked sweet potatoes until Thanksgiving 2003 when Chase made his Aunt's Sweet Potato Casserole. A pound of butter and brown sugar and like one sweet potato and you're in heaven) These are not those sweet potatoes, but they're pretty darn good and better for you. Once those taters are cooked, mash 'em up. Add some crushed pineapple (no juice), 1/4 cup or so of Maple syrup (more or less depending on how much you're making) and 1/4 - 1/2 tsp of cinnamon. Then you plop the taters on the chops, pour the pineapple juice over top and bake for 25-30 min at 350. Serve with steamed broccoli or a salad and some bread. Delish!

We revamped our diet too. We thought we were eating really well until we read the South Beach Diet Book. If you are open to suggestions, try reading the first 6 chapters of that book and then glance over to the cook book. They have great low carb recipes and often times inspire me to do something different too. Good luck with it!

Well, I'm not revamping really. I like butter and sugar way too much. I used to get Cooking Light magazine, but I'd make all the recipes NOT using the low fat/fat free ingredients :-) I am trying to cut out the fruit snacks and chewy bars that are oh so easy to feed the kids while on the run.

We've given up sugar. It's my arch nemesis. That recipe sounded fabulous. I'll have to check out that website. Oh, and lastly, I have to defend the sweet potato casserole. It's got at least TWO sweet potatoes in it, not one:)

Pork chops are a fam favorite so i'll have to try it. I'd be hung at high noon if i revamped the meals though. Craig loses weight every time he blinks and I can't keep up with Adam's appetite. He's as thin as a rail too. How'd they get so lucky?

oh so sorry, but BLECH! give me sweet potato fries any day, but sweet potato pie? not on your life. and WHY would you do that to a poor little pork chop??? what did it ever do to you??? i do want to defend my lifelong, probably irrational aversion to sweet potatoes dressed with anything sweet by saying that i did venture to try it again this year when we had thanksgiving dinner at a friend's house. still a big no way, jose. they are all yours!
